For my very first blog post, I will share a recipe that came from my Greek friend, Ioanna. It’s a recipe for Red Lentils with Greek Sage, and it’s so simple and yet so brilliantly flavorful. If you haven’t made red lentils before, (they’re actually orange before you cook them and light brown after) you’ll find that they cook very quickly and become very smooth- perfect for a small child. I recently made it for my son and he liked it. Believe me when I say this is practically fast food.
- 1 cup of red lentils
- 1/2 onion, finely diced
- 1 tbsp olive oil
- 1 tbsp dried Greek sage leaves or other sage
- 3 cups of vegetable or chicken broth
Sauté the onions in the oil for 1-2 minutes. Add the lentils, broth and sage, and bring to a boil. Simmer, stirring occasionally, for about 15-20 minutes until thick. Season to taste with salt and pepper, and drizzle with a flavorful olive oil.
